Omar and I made chicken tortilla soup to try out the Instant Pot and it came out perfect. Instant Pot Chicken Tortilla Soup Recipe
Ingredients:
1 white onion
2 cloves garlic
2 medium Carrots
2 small zucchini (or 1 large)
3 celery sticks
1 can pinto beans
1 can black beans
1 can chopped green chilies (1/4 cup)
1 can diced tomatoes
1 tbsp cumin
1 tbsp chili powder
1/2 tbsp salt
1/2 tbsp black pepper
1 capful white vinegar
1 lb chicken breast
1 carton vegetable or chicken broth (32 oz)
2 cups water (to fill line on Instant Pot)
cilantro, avocado, and lime (for garnish)
Directions:
- Use the sauté function on the Instant Pot to cook onion, garlic and spices until soft and fragrant.
- Add liquids and other vegetables.
- Place chicken breast on top
- Set Instant Pot to “soup” function (about 30 min)
- Once the Instant Pot is finished it will stop cooking and keep your soup warm until you turn it off! :)
- Top with fresh cilantro and serve with half an avocado and tortilla chips! You could also add sour cream or cheese on top too!
