Hello Loves! Today, I wanted to share with you my quinoa protein bowl recipe! Every time I share my food on my Instastory, I get so many question about recipes and to share more, so I thought adding this recipe on the blog would be easy for you guys to come back to!
This is the perfect meal to pack for work or school and would be a great healthy lunch or dinner idea! This lasts my husband and I about 3 days, since chicken doesn’t stay fresh for very long. Be creative with this and add your own ingredients! Roasted sweet potato and avocado would be so yummy! I hope you enjoy!

Ingredients:
Chicken
2 lb chicken breast
2 Tbsp garlic salt
1 Tbsp lemon pepper
1 tsp all spice
2 Tbsp olive oil
Chickpeas
3 cans chickpeas
1 Tbsp garlic salt
1 Tbsp cumin
Quinoa
2 cups dry quinoa- I use this brand
Salad
5 Baby cucumber
1 pack cherry tomato
1 red onion
mint
kalamata olives
1 lemon
2 Tbsp olive oil
Salt to taste
Store bought hummus
Directions:
- Quinoa: Make quinoa per package instructions. Quinoa cooks pretty fast, but I used my rice cooker and it made it just that much easier!
- Chicken: Preheat oven to 400 F. Cut the breasts up into about 4-5 pieces each so that they cook faster. Place into a bowl and mix olive oil, garlic salt, lemon pepper and all spice until chicken is evenly coated. Place evenly onto a foiled baking sheet and cover with foil. Bake in the oven for 25-35 min.
- Chickpeas: Drain out water from canned chickpeas. Add chickpeas, garlic salt and cumin to a sauce pan and stir until chickpeas are heated.
- Salad: Chop cucumber, red onion, cherry tomato, mint, kalatata olives and mix. For dressing mix olive oil lemon and salt in separate container. Keep the dressing on the side if meal prepping so that the vegetables stay fresh.
- Once finished, make a bowl and add a dollop of hummus! SO yummy! If you’re packing this for work or school, just make sure to keep the salad and hummus in a different container so that you can heat up the rest in the microwave. :) We use these glass containers for work!
