Hey Loves! I’ve been on a hunt for new recipes that are super filling and have lots of flavor. I love creating bowls with lots of protein and vegetables because they’re super easy to make, keep you full, and a great option to meal prep for the week. This black bean sweet potato bowl is so delicious and packed with tons of flavor.

Ingredients:
4 sweet potatoes
2 cans of black beans
2 cans of corn
2 bell peppers
1/2 of a red onion
1 avocado to garnish
Cilantro to garnish
Spices:
Garlic powder
Salt
Pepper
Chili powder
Cumin
Instructions
Step 1: Cut sweet potato into small cubes and toss with olive oil and spices. Set oven or air fryer to 400F and cook for 30 minutes or until soft and crispy on the outside.
( Spice measurements for sweet potatoes: 1 Tbsp garlic powder, 1/2 Tbsp chili powder, 1/2 Tbsp cumin, 1 teaspoon salt, 1 teaspoon pepper)
Step 2: Drain and rinse black beans and corn. Sauté beans and corn separately with all spices in a skillet until warm!
(Spice measurements for beans and corn separately: 1/2 teaspoon chili powder, 1 teaspoon cumin, 1 teaspoon garlic powder, 1/2 teaspoon salt, 1/2 teaspoon pepper)
Step 3: Chop up onions and peppers and sauté them in a skillet with olive oil until fragrant.
Step 4: Combine all ingredients in your bowl and garnish with avocado and cilantro. Enjoy!
