Hello, sweeties :)
During Ramadan I always end up cooking more often with more free time on my hands and less food in my stomach. ;) Of course, whether I’m cooking or baking, it is always a healthy (but still amazingly yummy) version! Tonight, I whipped up a batch of ooey gooey brownies!!
My family always gives me a hard time about my healthy cooking. “What are you making, Leena?” My dad asks when he sees the chocolate chips. “Brownies :)” I say. “What’s in them?” he asks cautiously. “Almond butter.” I say cheerfully. “Hm.” He says. The rest of my family roll their eyes. They always doubt me!
Let me just tell you they loved them so much half the pan was gone by the end of the night. I actually prefer them to regular brownies because they have a more rich flavor and texture and are more filling!
Trust me, no one would ever know these are dairy, grain, and processed sugar free! :)
Ingredients:
1 16 oz. jar creamy almond butter
2 eggs
1 cup honey
1 tablespoon vanilla extract
1/2 cup cacoa powder
1 teaspoon baking soda
1/2 teaspoon sea salt
1 cup dark chocolate chips
Directions:
1. Preheat oven to 325 degrees Fahrenheit
2. Blend almond butter, eggs, honey, and vanilla in a large bowl
3. Blend in cacoa, salt and baking soda
4. Fold in chocolate chips
5. Grease a 9 x 13 inch baking dish and pour in batter
6. Bake at 325 degrees Fahrenheit for 30-35 minutes
(The top of the brownies should feel firm. If you stick a toothpick in them, it should not come out completely clean. As the brownies cool and set, they will be soft and chewy.)
